There is only one difference: All Natural mix uses natural real vanilla and it is only sold in retail packages. The Original mix uses artificial vanilla flavoring. That's it! The taste for both products is the same: Great! Natural is our choice. In our opinion, the mix makes great pancakes and excellent waffles. The malted flaver is more distinct in the pancakes. Enjoy! I hate having to search to find the info so I can figure out if the product has something I can't eat, so here is the ingredient list: Enriched Wheat Flour (Wheat Flour, Niacin, iron, thiamine mononitrate, riboflaving, folic acid), Corn Flour, Leavening (Baking Soda, Monocalcium Phosphate, Sodium Acid Pyrophosphate), Malt Powder, Salt, Sugar, Buttermilk, Natural Flavor. CONTAINS: WHEAT AND MILK. ALright, now that that is out of the way, these are great, and easy to make, you just add butter, eggs and water for waffles (I've not tried it for pancakes). You can also halve the recipe on the container to make a half batch, which is nice when you aren't feeding a whole family. The texture and flavor are excellent for something that mixes together so quickly (2 minutes tops), and the picky eaters in my house love eating these, including the super picky toddler... I had been using the regular mix for both waffles and pancakes with outstanding results, and then I stumbled upon the All Natural mix. I am frankly not sure what the main differences are between the regular mix and the all natural mix, but with kids around the house, it seemed like a no-brainer to be using the All Natural. The waffles and pancakes are still amazing with the All Natural, and I still get requests all the time from my kids for "Daddy's Waffles" and "Daddy's Pancakes". Needless to say, I'll be sticking with Carbon's over any other mix, and I'll be sticking with the All Natural. The Sour Cream Silver Dollar pancakes and the Cornmeal Blueberry Cakes are a tie for second place at our breakfast table. I would rate this little book 5 stars, but I haven't tried more than about four of the recipes-yet. As they say, enjoy! Whether you need something for breakfast or want to try a new version on a favorite snack for the children (mine adore the Peanut Butter Waffles anytime of the day), waffles are a good choice, not only because they freeze well, but they taste Great!! Proving again that good things come in small packages; this is a Totally complete Pancake and Waffle Cookbook! I picked up this book because the cover and recipes were irresistible. It started a minor revolution at my house, and we now have a tradition of Saturday morning pancakes. Dorie Greenspan patiently describes ingredients, techniques, and equipment (nothing scary here). The recipes are divided into three sections, suitable for breakfast, brunch, and dinner. All of the breakfast ones I've tried are wonderfully sweet and moist -- I eat them without any topping. Our favorites include the simple cornmeal pancakes, cottage cheese pancakes, and the luxurious, light, lemon and ricotta pancakes. The brunch and dinner pancake recipes are adventurous, with spicy and unusual ingredients. I haven't been interested enough to try any. But the book is worth it for the clear instructions and delicious breakfast pancakes. Someone should seriously fix that. If you can get your hands on a reasonably priced copy, do it. Now. I prepare food for the family so we will not starve. But with this book I can make breakfast fit for a specialty brunch café. Instructions are very clear and easy to follow and the results are always delicious. I admit, I've owned it for years and have only tried about 6 recipes, but every time I open it I remember how good those were and go back. This morning I finally tried a new one, the Four Season's Lemon Ricotta Hotcakes. I was a bit intimidated by the origin of the recipe, but they were delightful! This book is perfect if your family (like mine) loves pancakes or if you just want to try something extra special for breakfast (although she includes many non-breakfast recipes, including many savory preparations).
